Quick Comfort Pot Pie
Ingredients
  • 3 tablespoons butter, melted, divided
  • 1 (16 ounce) package frozen mixed vegetables
  • 1 (5 ounce) can chicken chunks, drained
  • 2 (10.5 ounce) cans condensed cream of chicken soup
  • 1/2 cup reduced-fat milk
  • salt and pepper to taste
  • 1 (10 ounce) can refrigerated flaky layer biscuits
Instructions
1
Preheat your oven to the high temperature of 425 degrees Fahrenheit, or equivalently 220 degrees Celsius.
2
Next, take a pastry brush and apply a generous amount of melted butter to the interior of your 9-inch deep-dish pie dish.
3
To prepare the filling, combine a medley of vegetables and cooked chicken in a saucepan over medium heat. Allow the mixture to simmer until the vegetables are tender, typically taking 5 to 7 minutes.
4
Once the vegetables have reached the desired tenderness, incorporate a can of condensed soup into the mixture and stir until well combined. Then, gradually add milk to the saucepan, stirring constantly to achieve a smooth consistency. The mixture should not be too liquidy.
5
Add a pinch of salt and pepper to taste, then bring the mixture to a rolling boil on your stovetop.
6
Immediately remove the saucepan from the heat source and pour the mixture into the prepared pie dish.
7
Next, separate a package of biscuits into individual layers and gently place them on top of the chicken-vegetable mixture.
8
Finally, drizzle any remaining 2 tablespoons of melted butter over the biscuits to add a touch of richness.
9
Bake the pie in your preheated oven until it reaches a golden brown color, approximately 15 minutes.
10
Once the pie has finished baking, remove it from the oven and allow it to rest for 15 minutes before serving.
