Quick Cheese and Spinach Pie
Ingredients
  • cooking spray
  • 1 bunch fresh spinach
  • 3 green onions, diced
  • 1/4 cup chopped fresh dill
  • 1 teaspoon minced garlic
  • salt and ground black pepper to taste
  • 5 ounces shredded mozzarella cheese
  • 1 (4 ounce) package grated Parmesan cheese
  • 1 (4 ounce) package crumbled feta cheese
  • 1 egg, lightly beaten
  • 2 sheets frozen puff pastry, thawed
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
2
Next, take a large baking sheet and lightly coat it with cooking spray to prevent sticking.
3
Heat a large skillet over medium-high heat, then spray it with cooking spray.
4
Sauté chopped spinach, green onions, dill, garlic, salt, and pepper in the skillet until the spinach softens and starts to release its moisture, taking about 3-5 minutes.
5
In a separate bowl, mix together mozzarella, Parmesan, and feta cheeses. Add an egg to the mixture and combine it with the sautéed spinach.
6
Place a large sheet of puff pastry on the prepared baking sheet. Use your finger to moisten the edges, creating a thin layer of water.
7
Add the spinach and cheese mixture to one half of the pastry, leaving a 1/2-inch border around the edges.
8
Place another sheet of puff pastry on top and press down the edges to seal them tightly. Make two shallow cuts on top of the pastry using a knife, allowing steam to escape during baking.
9
Spray the top of the pastry with cooking spray for added crispiness.
10
Bake the pastry in your preheated oven until it's golden brown, taking about 15-20 minutes.
11
Once done, let the pastry cool for 5 minutes before slicing it into sections using a pizza cutter.
