Quick Chana Masala
Ingredients
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves minced garlic
  • 2 teaspoons grated fresh ginger
  • 1 green chile pepper, chopped
  • 1 tablespoon ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cayenne pepper
  • 4 cups chopped tomatoes
  • 4 cups cooked chickpeas (garbanzo beans)
  • 1/2 cup tomato sauce
  • 1/2 cup plain yogurt
  • 1 lemon, juiced
  • 1/2 teaspoon salt
Instructions
1
Heat a generous amount of oil in a large saucepan over an intermediate heat setting.
2
Sauté sliced onions, minced garlic, grated ginger, and chopped green chile pepper in the hot oil until they become soft and clear, taking around 10 minutes to achieve this.
3
Add a blend of spices - cumin, paprika, coriander, garam masala, turmeric, and cayenne pepper - to the sautéed onion mixture and stir well.
4
Continue cooking the onions with these spices until they release a fragrant aroma, which should take around 1 to 2 minutes.
5
Next, combine diced tomatoes, chickpeas, and tomato sauce in the saucepan. Stir everything together and let it simmer until the tomatoes become soft, which should take around 5 minutes.
6
Stir in some plain yogurt to achieve an even color for the mixture. Then, let it simmer again until everything is hot and well combined, taking about 5 minutes more.
7
Finally, remove the saucepan from the heat source and stir in some fresh lemon juice and salt to bring out the flavors.
