- 1 yellow bell pepper, diced
- 1/2 onion, diced
- 1 (10 ounce) can chunk chicken breast, drained and flaked
- 1 1/2 teaspoons Cajun seasoning
- 1 (16 ounce) can chicken broth
- 1 (16 ounce) can diced tomatoes
- 2 cups instant brown rice

Heat a large pot of water to its boiling point, then bring it to a rolling boil. Boil the sausage until it reaches your desired level of doneness, typically between 8 to 12 minutes; once cooked, drain the sausage.

In a separate pot, heat canola oil over medium-high heat until it reaches its smoking point. Then sauté the sausage, celery, bell pepper, and onion in the hot oil until the vegetables begin to lose their crunch, approximately 5 minutes.

To add flavor to the mixture, stir in your chicken and Cajun seasoning. Pour in the broth and tomatoes, then bring the mixture to a boil; add cooked rice to the pot and stir until it's well combined. Return the mixture to a boil, then reduce heat to medium-low and cover the pot with a lid. Allow it to simmer for 5 minutes, or until the rice has absorbed most of the liquid.

After 5 minutes, remove the lid and stir the mixture. Continue to simmer until the rice has fully absorbed the liquid and is tender, approximately 5 minutes more.
