  • 1 zucchini, coarsely chopped
  • 1 yellow squash, coarsely chopped
  • 1 carrot, coarsely chopped
  • 1 red bell pepper, coarsely chopped
  • 1 yellow bell pepper, coarsely chopped
  • 1/2 cup sliced baby portabella mushrooms
  • 4 cups vegetable broth
  • 1/2 teaspoon smoked sweet paprika
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1 tablespoon chopped fresh cilantro
  • 1 (16 ounce) can chickpeas, drained
  • 2 Roma tomatoes, sliced
  • 2 cups dry couscous
  • 1 teaspoon grated orange zest
  • 1 tablespoon grated Parmesan cheese
  • 1/2 teaspoon paprika
  • 1 tablespoon finely chopped toasted almonds

Heat a substantial amount of oil in a large cooking vessel over a moderate-low heat setting. Introduce the onion, zucchini, yellow squash, and carrot into the pot and cook, stirring occasionally, until the onions start to become more tender and lose their initial opacity, approximately 5 minutes. Add the red and yellow peppers and mushrooms to the pot and continue cooking for another 3 minutes, ensuring that the vegetables remain firm in texture.

Next, pour in a sufficient amount of vegetable stock and add a pinch of paprika, cardamom, salt, and cilantro to the mixture. Bring the liquid to a rolling boil; then, decrease the heat to a low setting. Stir in the chickpeas and tomatoes. Gradually pour in the couscous, stirring to combine. Remove the pot from the heat source immediately and cover it with a lid. Allow the mixture to stand, covered, for 5 minutes.

Following this, use a fork to gently fluff the couscous. The couscous should have absorbed approximately half of the cooking liquid by this point.

Serve the dish at a slightly warmer temperature than that of the surrounding room. Garnish with orange zest, grated cheese, paprika, and almonds to add a touch of visual appeal.
