- 1 1/2 pounds uncooked medium shrimp, peeled and deveined
- 1 yellow bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 orange bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 1 1/2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1 medium lime, juiced, or as needed
- 12 (6 inch) flour tortillas, warmed
- 1 avocado, sliced, or to taste
- 1/4 cup chopped fresh cilantro
Instructions
1
Preheat the oven to a high temperature of 450 degrees Fahrenheit, or 230 degrees Celsius.
2
Use a non-stick baking sheet and spray it with cooking spray to prevent food from sticking.
3
In a large mixing container, merge shrimp, bell peppers, red onion, olive oil, chili powder, salt, black pepper, garlic powder, onion powder, cumin, and paprika.
4
Mix the ingredients well together until they are fully incorporated.
5
Spread the combined mixture evenly across the prepared baking sheet.
6
Place the baking sheet in the preheated oven and cook until the shrimp turn a vibrant pink color and become firm to the touch, approximately 8 minutes.
7
Increase the oven's heat with its broiler function and cook for an additional 2 minutes.
8
Add a squeeze of fresh lime juice over the cooked mixture.
9
Assemble fajitas on tortillas by adding sliced avocado and sprinkling with cilantro.
