Quebec Maple Syrup Pudding

  • 2 cups heavy cream
  • 3/4 cup unsalted butter, at room temperature
  • 3/4 cup white sugar
  • 1/4 teaspoon vanilla extract
  • 2 eggs, at room temperature
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 1 3/4 cups all-purpose flour

Preheat your oven to the desired temperature of 425 degrees Fahrenheit (220 degrees Celsius). Place a deep baking dish on a sheet pan and grease it with butter to prevent sticking.

Combine maple syrup and heavy cream in a saucepan over medium-high heat, stirring occasionally until the mixture reaches a boil. Remove from heat once it starts to bubble and set aside, allowing the mixture to cool slightly.

In a separate bowl, cream together butter and sugar using a spatula or electric mixer until you achieve a smooth consistency. Whisk in vanilla extract and the first egg until fully incorporated, followed by the second egg. Add baking powder, salt, and flour to the mixture, stirring until just combined.

Transfer the batter to the prepared baking dish and pour the maple-cream sauce over the top, leaving a small border around the edges of the dish. Reserve any excess sauce for serving.

Bake the pudding in the center of your preheated oven until it reaches a golden brown color and a toothpick inserted into the center comes out mostly clean, approximately 30 minutes. Allow it to cool for 10 minutes before serving with any remaining maple-cream sauce.
