Quanta Firfir with Spiced Beef
Ingredients
  • 2 red onions, chopped
  • 1/3 cup vegetable oil
  • 1 tablespoon garlic paste
  • 4 ripe tomatoes, chopped
  • 3 cups water, divided
  • 14 ounces dried beef
  • 2 tablespoons Ethiopian berbere seasoning
  • 1/2 cup Ethiopian kibbeh (spiced clarified butter)
  • 2 teaspoons salt
  • 2 pieces injera (Ethiopian bread)

Heat a large saucepan over medium-high heat and add the onions, allowing them to cook until they begin to develop a rich brown color, approximately 5 minutes.

Next, add the vegetable oil and garlic paste to the saucepan, stirring constantly until the aroma of the garlic is released into the air, roughly 5 minutes.

Following this, introduce the tomatoes to the saucepan and continue cooking until they have softened and become more palatable, taking around 5 to 7 minutes.

Subsequently, combine the remaining 1/2 cup of water, dried beef, and berbere seasoning into the saucepan, then lower the heat to a more moderate level and allow the flavors to meld together, approximately 10 minutes.

Continuing with this process, periodically add 1/3 cup of water to the saucepan every few minutes until the beef has become tender and the sauce has thickened, taking around 20 minutes.

Finally, stir in the kibbeh and salt to complete the dish.

To serve, take 1 piece of injera and tear it into bite-sized pieces before gently incorporating them into the sauce.
