Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 (28 ounce) can diced tomatoes
- 2 cups cubed fresh pumpkin
- 1 (15 ounce) can chili beans
- 1 (15 ounce) can seasoned black beans
- 1 onion, chopped
- 3 tablespoons brown sugar
- 1 tablespoon pumpkin pie spice
- 1 tablespoon chili powder
Instructions
1
Preheat your kitchen by heating the olive oil in a substantial cooking vessel over an intermediate heat setting. Introduce the turkey into this pot; cook, stirring frequently, until it transforms into a crumbly, browned, and no longer pink consistency, approximately 10 minutes. Discard any excess oil that accumulates during this process.
2
Transfer the cooked turkey to a slow cooking device; combine it with diced tomatoes, pumpkin puree, chili beans, black beans, onion, brown sugar, a blend of spices commonly used in pumpkin desserts, and chili powder. Cover the slow cooker to allow the flavors to meld together.
3
Allow the mixture to simmer on a low heat setting for at least 3 hours, or until the pumpkin becomes tender and starts to break apart naturally.
