Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 cup rolled oats
- 4 teaspoons pumpkin pie spice
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 1/2 cups pumpkin puree
- 1 cup brown sugar
- 1 cup white sugar
- 2/3 cup vegetable oil
- 1/2 cup applesauce
- 3 eggs
- 1 teaspoon vanilla extract
- 1/4 cup raisins
- 1/4 cup packed brown sugar
- 2 tablespoons butter, softened
- 2 tablespoons rolled oats
- 2 tablespoons all-purpose flour
Instructions
1
Firstly, preheat your oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius).
2
Next, take 18 muffin cups and grease them or line them with paper liners to prevent the muffins from sticking.
3
Then, in a large bowl, combine 2 1/2 cups of flour, 1/2 cup of oats, pumpkin pie spice, baking soda, baking powder, and salt. Mix these dry ingredients together until well combined.
4
In a separate large bowl, whisk together 2 1/2 cups of pumpkin puree, 1 cup of brown sugar, 1 cup of white sugar, 1/2 cup of vegetable oil, 1/4 cup of applesauce, 2 eggs, and 1 teaspoon of vanilla extract until smooth.
5
Now, add the dry ingredients to the pumpkin mixture and stir until well combined. Fold in 1/2 cup of raisins.
6
Meanwhile, in a small bowl, beat 1/4 cup of brown sugar with 2 tablespoons of butter until it forms a creamy and smooth mixture.
7
Using a fork, whisk together 2 tablespoons of oats and 2 tablespoons of flour into the sugar-butter mixture until it forms a crumbly streusel topping.
8
Finally, spoon the batter into the prepared muffin cups, filling each 2/3 full. Sprinkle a generous amount of streusel topping over each muffin.
9
Bake the muffins in the preheated oven for 25 to 35 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
