Ingredients
- 1 1/4 cups chocolate wafer crumbs
- 1/4 cup butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 3/4 cup white sugar
- 3 eggs
- 1 1/2 cups canned pumpkin pie filling
- 1 tablespoon cornstarch
- 1 cup sour cream
- 2 (1 ounce) squares semisweet chocolate
- 2 teaspoons vegetable oil
Instructions
1
Heat the oven to its highest temperature setting, which is 350 degrees Fahrenheit or 175 degrees Celsius.
2
Combine the crushed chocolate wafers and melted butter in a large mixing container, stirring until well incorporated. Press the mixture firmly onto the bottom of a 9-inch round cake pan that is designed to release easily.
3
Using an electric mixer, blend the cream cheese and sugar in a large bowl until they form a smooth consistency. Gradually add eggs one at a time, blending just until the mixture comes together. Mix in the pumpkin pie filling and cornstarch, then pour the batter over the chocolate wafer crust.
4
Place the cheesecake in the preheated oven and bake until the center is just set, taking between 50 to 55 minutes.
5
Once the cheesecake has cooled slightly, spread a layer of sour cream over its surface.
6
Using a microwave-safe bowl, heat the chocolate and oil in short bursts until completely melted, stirring between each heating. Drizzle the melted chocolate over the sour cream topping in a spiral pattern, starting from the center and working your way outward through small circles. Remove the cheesecake from its pan by gently prying it loose with a toothpick, which will help to create the web-like design.
