Ingredients
- 2 3/4 cups all-purpose flour
- 1 tablespoon ground cinnamon
- 2 teaspoons baking powder
- 2 teaspoons pumpkin pie spice
- 1 teaspoon ground nutmeg
- 1 teaspoon ground allspice
- 1 cup white sugar
- 3 eggs, room temperature
- 1/2 cup butter, melted and cooled
- 1 1/2 cups canned pumpkin puree
- 1 teaspoon vanilla extract
Instructions
1
Heat the pizzelle iron to the recommended temperature as indicated by its manufacturer.
2
Mix together flour, cinnamon, baking powder, pumpkin pie spice, nutmeg, and allspice in a bowl until well combined.
3
Using an electric mixer, cream together sugar and eggs in a separate bowl. Add butter to the mixture and blend until it's smooth and even. Introduce pumpkin puree and vanilla extract into the mix, blending until fully incorporated. Gradually add the flour mixture to the wet ingredients and continue mixing on a medium speed until you achieve a smooth, even batter.
4
Spoon approximately one tablespoon of the batter onto the preheated pizzelle iron. Cook for 30 to 40 seconds, or a few seconds longer if you prefer your pizzelle darker.
5
Gently lift the cooked cookies out of the iron using a fork or spatula, and transfer them to a sheet of waxed paper to cool.
