- 2 eggs
- 1/2 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1/4 cup finely chopped pecans

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). To prepare the baking sheet, line it with parchment paper to prevent any sticking issues during the baking process.

In a large mixing bowl, combine and whisk together flour, white sugar, brown sugar, baking powder, salt, cinnamon, nutmeg, and ginger until they are thoroughly incorporated.

In a separate mixing container, use an electric mixer to beat the eggs with pumpkin puree and vanilla extract until well combined. Then, stir in some chopped pecans.

Gradually pour the dry ingredients into the egg mixture and mix until a stiff dough forms. Divide this dough in half, shape each half into a log approximately 10 inches long and 2 inches wide, and place the logs onto the prepared baking sheet.

Allow the logs to cool on the baking sheet for 5 minutes before transferring them to a work surface. Slice these logs into individual cookies, approximately 1/2-inch thick.
