Pumpkin Spice Pecan Biscotti
Ingredients
  • 2 3/4 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 cup brown sugar
  • 1 1/2 teaspoons baking powder
  • 1 pinch salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 2 eggs
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/4 cup finely chopped pecans
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). To prepare the baking sheet, line it with parchment paper to prevent any sticking issues during the baking process.
2
In a large mixing bowl, combine and whisk together flour, white sugar, brown sugar, baking powder, salt, cinnamon, nutmeg, and ginger until they are thoroughly incorporated.
3
In a separate mixing container, use an electric mixer to beat the eggs with pumpkin puree and vanilla extract until well combined. Then, stir in some chopped pecans.
4
Gradually pour the dry ingredients into the egg mixture and mix until a stiff dough forms. Divide this dough in half, shape each half into a log approximately 10 inches long and 2 inches wide, and place the logs onto the prepared baking sheet.
5
Bake these logs in your preheated oven until they are lightly browned, taking around 25 to 30 minutes.
6
Allow the logs to cool on the baking sheet for 5 minutes before transferring them to a work surface. Slice these logs into individual cookies, approximately 1/2-inch thick.
7
Using a sharp knife and gentle sawing motion, cut the cookies into individual pieces. Return these cookies to the parchment-lined baking sheet.
8
Place the cookies back in the oven and bake until they are lightly browned, approximately 8 minutes. Flip them over and continue baking until crisp, another 8 minutes.
9
Finally, transfer the cookies to wire racks to cool completely.
