Ingredients
- 8 ounces baby yellow potatoes
- 8 ounces pie pumpkin
- 1 teaspoon butter
- 1 1/2 cups shredded Gruyere cheese
- 1/2 teaspoon dried thyme
- salt and ground black pepper to taste
- 1 cup half-and-half
- nonstick aluminum foil
Instructions
1
First, preheat your oven to the desired temperature of 375 degrees Fahrenheit or 190 degrees Celsius.
2
Next, take a moment to prepare your baking vessel by lightly coating it with a non-stick substance.
3
Now, carefully slice the potatoes and pumpkin using a specialized kitchen tool called a mandoline, cutting them into extremely thin slices - about 1/8 of an inch thick.
4
Subsequently, place half of the pumpkin slices at the bottom of your prepared casserole dish. Sprinkle a pinch of salt and pepper over them, adding about one-fourth of the thyme and one-fourth of the Gruyère cheese.
5
Following that, layer half of the potato slices on top, seasoning them with a pinch of salt and pepper, adding about one-fourth of the thyme, and sprinkling one-fourth of the Gruyère cheese.
6
Repeat this layering process, alternating between pumpkin and potato slices until all the ingredients have been used up.
7
After that, pour a generous amount of half and half over the top layer of your dish. Cover it with aluminum foil to prevent drying out.
8
Finally, bake your casserole in the preheated oven for 45 minutes. Remove the foil and continue to bake for an additional 15 minutes, or until your potatoes are tender and the top is nicely browned. Remove it from the oven and let it rest for 15 minutes before serving.
