Ingredients
- 1 (8 ounce) package cream cheese
- 1/2 cup white sugar
- 1 tablespoon all-purpose flour
- 1 egg
- 1 tablespoon orange zest
- 1 2/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon pumpkin pie spice
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 eggs
- 1 1/2 cups white sugar
Instructions
1
Firstly, preheat your oven to the ideal temperature of 325 degrees Fahrenheit (165 degrees Celsius). Next, lightly coat two 8x4 inch loaf pans with a thin layer of oil to prevent sticking.
2
Combine the cream cheese, ½ cup granulated sugar, 1 tablespoon all-purpose flour, 1 egg, and orange zest in a medium-sized bowl; mix until the ingredients are well combined and smooth. Set this mixture aside for later use.
3
In a separate bowl, sift together 1 ⅔ cups of all-purpose flour, baking soda, salt, cinnamon, cloves, and pumpkin pie spice; set this mixture aside as well.
4
In a large bowl, combine the cooked pumpkin, 2 tablespoons of vegetable oil, 2 eggs, and 1 ½ cups granulated sugar; mix until the ingredients are well incorporated.
5
Stir the pumpkin mixture into the flour mixture just until they come together in a cohesive mass. If desired, fold in some chopped pecans to add texture and flavor.
6
Pour half of the pumpkin batter into the prepared loaf pans. On top of this layer, spoon the cream cheese mixture you set aside earlier. Finally, pour on the remaining pumpkin batter to fill both loaf pans.
7
Place the prepared loaf pans in the preheated oven and bake until a toothpick inserted into the center of the loaf comes out clean, approximately 60 to 70 minutes.
8
Once baked, remove the loaves from the pans and let them cool briefly on a wire rack before transferring them to a completely cool environment.
