Ingredients
- 1 (8 ounce) package cream cheese
- 1 large egg
- 3 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 5 tablespoons white sugar
- 4 1/2 tablespoons all-purpose flour
- 3 tablespoons chopped pecans
- 3/4 teaspoon ground cinnamon
- 3 tablespoons cold butter, cubed
- 2 1/2 cups all-purpose flour
- 2 cups white sugar
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1 1/3 cups canned pumpkin
- 2 large eggs
- 1/3 cup olive oil
- 2 teaspoons vanilla extract
Instructions
1
Gather all necessary ingredients and materials beforehand.
2
Preheat your oven to 375 degrees Fahrenheit (or 190 degrees Celsius, depending on your location). Make sure to grease and flour 18 muffin cups or use paper liners for easy removal.
3
To create the filling, use an electric mixer to beat cream cheese in a medium-sized bowl until it reaches your desired consistency.
4
Combine egg, brown sugar, and vanilla extract in the same bowl; mix until smooth and well combined. Set this mixture aside for later use.
5
To prepare the streusel topping, combine sugar, flour, pecans, and cinnamon in a separate bowl. Use your fingers or a fork to mix the ingredients until they are well combined.
6
In another large bowl, sift together flour, sugar, baking powder, cinnamon, and salt to create a smooth mixture. Form a well in the center of this bowl.
7
Add pumpkin puree, eggs, olive oil, and vanilla extract to the well; mix until everything is smooth and well incorporated.
8
Pour the batter into the prepared muffin cups, filling them about halfway full.
9
Spoon 1 tablespoon of the filling over the batter in each muffin cup, gently pressing it down to avoid any air pockets. Make sure the filling doesn't touch the bottom of the muffin cup.
10
Sprinkle a generous amount of streusel topping over each muffin cup.
11
Place the muffins in the preheated oven and bake until a toothpick inserted into the center of one of the muffins comes out clean, taking about 20 to 25 minutes.
