Pumpkin Cookies with Cream Cheese Frosting
Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup unsalted butter, softened
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 (15 ounce) can pumpkin puree
  • 1 (3 ounce) package cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
Instructions
1
Preheat the oven to 350 degrees Fahrenheit, which is equivalent to 175 degrees Celsius. Next, lightly coat two baking sheets with a thin layer of cooking spray or oil.
2
In order to prepare the cookies, combine flour, baking powder, cinnamon, baking soda, nutmeg, and ginger in a bowl. Mix these dry ingredients thoroughly until well combined.
3
In a separate large bowl, use an electric mixer to cream together butter, both sugars, egg, and vanilla until the mixture is smooth and even. Add pumpkin puree to this mixture and blend until fully incorporated.
4
Gradually add the dry ingredients to the pumpkin mixture, stirring until the batter is moist and well combined.
5
Scoop out small spoonfuls of the batter, about 1 inch in diameter, and place them onto the prepared baking sheets. Leave a distance of approximately 5 inches between each cookie.
6
Bake the cookies in the preheated oven for 10 to 12 minutes, flipping the baking sheets halfway through. The cookies are done when they are lightly browned.
7
Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes. Transfer the cookies to a wire rack and allow them to cool completely, which should take around 25 minutes.
8
While the cookies are cooling, prepare the frosting. Use an electric mixer to cream together cream cheese, butter, and vanilla until the mixture is soft and smooth. Gradually add powdered sugar, about 1/2 cup at a time, until the frosting reaches your desired consistency.
9
Spread the frosting over the cooled cookies to add a sweet and creamy topping.
