Pumpkin Cheesecake Squares
Ingredients
  • 1 1/2 cups all-purpose flour
  • 1/2 cup butter, softened
  • 1/4 cup white sugar
  • 8 ounces cream cheese
  • 1/4 cup white sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 (15 ounce) can pumpkin puree
  • 1 (12 ounce) can evaporated milk
  • 3/4 cup white sugar
  • 2 eggs
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
Instructions
1
Preheat your oven to 425 degrees Fahrenheit, or 220 degrees Celsius.
2
Combine flour, butter, and one-quarter cup of sugar in a bowl until the mixture forms a cohesive dough. Press the dough into the bottom of a 9x13-inch baking dish.
3
Place your baked goods in the preheated oven and bake until the crust is lightly golden, taking anywhere from 10 to 15 minutes. Allow it to cool down.
4
Using an electric mixer, blend cream cheese with one-quarter cup of sugar, one egg, and a hint of vanilla until the mixture is smooth.
5
In another bowl, whisk together pumpkin puree, evaporated milk, three-quarters cup of sugar, two eggs, a pinch of cinnamon, a dash of salt, some ground ginger, and a few whole cloves.
6
Spread the cream cheese mixture evenly across the cooled crust. Next, pour the pumpkin mixture over the cream cheese layer.
7
Put your bars in the preheated oven and bake until they're set, approximately 60 minutes. Allow them to cool down to room temperature before refrigerating them overnight.
