SERVINGS

Ingredients
- 1 tablespoon vegetable oil
- 4 cloves garlic, minced
- 1/2 large yellow onion, diced
- 1 tablespoon brown sugar, or to taste
- 2 teaspoons kosher salt, or to taste
- 1 teaspoon ground black pepper
- 1 pinch cayenne pepper, or to taste
- 2 pounds boneless, skinless chicken thighs
- 3/4 cup ketchup
- 1 tablespoon Dijon mustard
- 1/2 teaspoon Worcestershire sauce
- 1 tablespoon hot sauce, or to taste
- 1 cup water
- 2 tablespoons thinly sliced green onions
- 1/2 cup diced jalapeno pepper
- 4 medium hamburger buns - split, toasted and buttered
Instructions
1
Begin by heating a generous amount of vegetable oil in a saucepan over high heat. Next, introduce the minced garlic and sliced yellow onion into the pan in that order. Add a small amount of brown sugar, followed by a pinch of kosher salt and black pepper to enhance the flavors. Introduce a dash of cayenne for added heat, then add the boneless chicken thighs to the pan. Pour in a generous amount of ketchup, followed by Dijon mustard and Worcestershire sauce to add depth. Finally, add a few dashes of hot sauce for an extra kick.
2
Allow the mixture to come to a rolling boil, stirring occasionally. Once boiling, reduce the heat to medium-low and let it simmer, uncovered, until the chicken becomes tender and falls apart easily, approximately 1 hour and 30 minutes.
3
After the chicken is cooked to perfection, stir in some chopped green onions and sliced peppers. Continue cooking for an additional 3-5 minutes, or until the peppers are just tender.
4
Taste and adjust the seasoning as needed before serving the chicken mixture on toasted hamburger buns.
