  • 1 (17.5 ounce) package frozen puff pastry, thawed
  • 2 tablespoons butter
  • 3 tablespoons flour, plus more for dusting
  • 2 cups chicken broth
  • 1/2 cup milk
  • 2 teaspoons Hidden Cove lemon-garlic blend (from Savory Spice Shop®)
  • 1 cup shredded Swiss cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 10 ounces rotisserie chicken breasts, diced
  • 1 (16 ounce) package frozen California blend vegetables, thawed
  • 1 egg, beaten

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

To prevent the casserole dish from sticking, lightly mist it with a non-stick cooking spray.

Cover your work surface with a light dusting of flour and roll out 1 pastry sheet into an 11-inch square shape.

Cut the remaining pastry sheet into long, thin strips and weave them into a lattice pattern on a baking sheet. Place the lattice in the freezer while you prepare the filling.

In a saucepan, melt butter over medium heat. Add flour and mix until it forms a smooth paste.

Gradually pour in chicken broth and milk, continuously whisking the mixture until it's fully incorporated. Introduce Hidden Cove lemon-garlic blend, Swiss cheese, and Parmesan cheese into the saucepan. Stir until all the ingredients are well combined, approximately 5 minutes.

Add cooked chicken and vegetables to the saucepan mixture.

Place the rolled-out pastry sheet into the prepared casserole dish, trimming any excess dough from the edges as needed. Pour the chicken filling into the pastry-lined casserole dish.

Top the filling with the woven lattice pastry, pressing and crimping the edges to create a secure seal. Brush the top of the pastry with beaten egg for added flavor.
