SERVINGS

Ingredients
- 2 cups vegetable oil for frying
- 1 green plantain, peeled and halved lengthwise
- 2 tablespoons vegetable oil
- 1 clove garlic, minced
- 4 ounces beef skirt steak, cut into thin strips
- 1/4 medium yellow onion, thinly sliced
- 1 pinch cumin
- 1 pinch dried oregano
- 1 tablespoon mayonnaise
- 1 slice processed American cheese, cut in half
- 2 slices tomato
- 3 leaves lettuce
Instructions
1
Preheat the deep fryer or large skillet to 350 degrees F by heating 2 cups of vegetable oil in it.
2
Place the plantain halves into the hot oil and cook for 1 to 2 minutes, or until they rise to the surface.
3
Remove the plantain halves from the oil and place them on paper towels to drain excess moisture.
4
To flatten the plantains, position two cutting boards side by side and place a plantain half between them.
5
Apply gentle pressure to flatten the plantain, then return it to the oil and cook for an additional 2-3 minutes, or until they turn golden brown.
6
Drain the flattened plantains on paper towels.
7
Heat 2 tablespoons of oil in a large skillet over medium-high heat.
8
Add the minced garlic, sliced skirt steak, chopped onion, ground cumin, and dried oregano to the skillet.
9
Stir frequently as the ingredients cook until the steak reaches its desired level of doneness.
10
Assemble the sandwiches by spreading mayonnaise on one plantain slice.
11
Add shredded cheese, the steak and onion mixture, lettuce leaves, and sliced tomatoes on top of the mayonnaise.
12
Place the other plantain half on top to form a complete sandwich, and cut it in half for serving.
