  • 1 cup tomato sauce
  • 1/3 cup sofrito
  • 8 green olives, finely chopped
  • 1 teaspoon crushed garlic
  • 1 teaspoon salt, divided
  • 1/4 cup recao
  • 1/4 teaspoon dried oregano

  • 3/4 cup vegetable oil
  • 6 large ripe plantains - peeled, halved, and each half cut lengthwise into 4 slices
  • 5 large eggs
  • 1 (9 ounce) package frozen French cut green beans, thawed and drained
  • 1 cup shredded mozzarella cheese

Heat a large skillet over medium heat and bring it to a moderate temperature. Add ground beef, stirring constantly until the exterior is nicely browned and the interior reaches a safe internal temperature, approximately 10 minutes.

Remove the meat from the pan and discard any excess fat.

Next, combine tomato sauce, sofrito, green olives, garlic, 1/2 teaspoon of salt, recao, and oregano in the skillet. Stir constantly over a low heat setting for 5 minutes.

Return the ground beef to the skillet and reduce the heat to a gentle simmer. Continue cooking, uncovered and occasionally stirring, for an additional 15 minutes.

Preheat your oven to a moderate temperature of 350 degrees Fahrenheit (175 degrees Celsius). Spray an 8- or 9-inch square baking pan with cooking spray to prevent sticking.

In a separate skillet, heat oil over medium-high heat until it reaches 350 degrees Fahrenheit (175 degrees Celsius). Fry plantain slices until they turn golden brown, flipping them every 3 to 5 minutes.

Drain the plantains on paper towels.

In a separate bowl, beat eggs thoroughly and add 1/2 teaspoon of salt.

Arrange half of the plantains at the bottom of the baking pan, overlapping them as needed to cover the entire surface. Layer the ground beef mixture, green beans, and remaining plantains in the pan. Pour eggs on top of the layers.

Finish by sprinkling mozzarella cheese over the egg mixture.

Bake in the preheated oven until the eggs are set and the cheese is melted, taking around 20 to 25 minutes.
