Ingredients
- 1/2 cup vegetable shortening
- 1/2 cup unsalted butter, softened
- 1 cup white sugar
- 1 large egg
- 1 large egg yolk
- 1 tablespoon vanilla extract
- 1 teaspoon almond extract
- 3 cups all-purpose flour, or more if needed
- 1 (21 ounce) package guava paste, or to taste
Instructions
1
Preheat the oven to its optimal temperature of 350 degrees Fahrenheit (175 degrees Celsius). Ensure two baking trays are adequately lubricated with cooking spray to prevent sticking
2
Combine softened butter and shortening in a large mixing vessel using an electric mixer until they blend smoothly together. Gradually incorporate granulated sugar and continue beating the mixture until it becomes light, airy, and fluffy. Introduce egg, egg yolk, vanilla essence, and almond extract into the mixture, blending them seamlessly
3
Gradually incorporate flour, one cup at a time, until the dough becomes stiff and holds its shape when molded into a ball. If this desired consistency is not achieved, add a small amount of flour to rectify the situation
4
Form dough into 1-inch balls and space them 1 inch apart on the prepared baking trays. Use your thumb to create small impressions in the center of each cookie, then fill these indentations with a cube of guava paste
5
Bake the cookies in batches in the preheated oven until they are lightly golden on the bottom, approximately 15 minutes, and switch the baking trays halfway through the cooking time; avoid overcooking
6
Allow the cookies to cool briefly on the baking tray before transferring them to a wire rack to continue cooling completely
