Puerto Rican Corned Beef Stew
Ingredients
  • 1 small potato, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 cup sweet corn kernels
  • 2 tablespoons sofrito
  • 2 cloves garlic
  • 1 (8 ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1 large bay leaf
  • 1/2 cup water
  • 1 (12 ounce) can corned beef
  • salt and ground black pepper to taste
Instructions
1
Acquire the necessary components for preparation.
2
Heat a small container of water until it reaches its boiling point. Introduce the potato into the pot and cook, exposed to air, until it is slightly soft, approximately 5 minutes. Remove.
3
Heat oil in a large cooking vessel or casserole dish over an intermediate-high temperature. Introduce the drained potatoes, corn, sofrito, and garlic; cook and stir until aromatic, 2 to 3 minutes.
4
Add tomato sauce, oregano, and bay leaf; cook and stir until the flavors merge, 2 to 3 minutes.
5
Add water and bring to a boil. Decrease the heat to low-medium and stir in corned beef; cook until warmed through, 6 to 8 minutes.
