Puerto Rican Coquito
Ingredients
  • 1 (12 fluid ounce) can evaporated milk
  • 2 large egg yolks, beaten
  • 1 (14 ounce) can cream of coconut
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup white rum
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
Instructions
1
Collect all necessary items, including the ingredients and equipment required for this recipe.
2
Combine evaporated milk and egg yolks in a heatproof container placed on top of a double boiler, where simmering water is gently bubbling. Heat the mixture over the simmering water, stirring continuously and attentively, until it reaches a suitable consistency that coats the back of a spoon and has reached 160 degrees F (71 degrees C) in temperature.
3
Transfer the mixture to a food processor or blender. Add cream of coconut, sweetened condensed milk, rum, water, vanilla, cinnamon, and cloves; blend until all the ingredients are well combined, taking approximately 30 seconds to achieve this.
4
Pour the mixture into sterilized glass containers and store them in the refrigerator for later use; serve chilled or over ice, if you prefer a colder serving temperature.
