Puerto Rican Chicken Fricassee
Ingredients
  • 1 pound chicken drumsticks
  • 1 tablespoon adobo seasoning
  • 1/2 (.18 ounce) packet sazon seasoning
  • 1/2 teaspoon salt
  • 5 large red potatoes, peeled and thickly sliced
  • 1 large red bell pepper, seeded and chopped
  • 1 large green bell pepper, seeded and chopped
  • 1 large onion, chopped
  • 5 cloves garlic, minced
  • 1 bunch fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1/2 cup dry red wine
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 fresh or dried bay leaves
Instructions
1
Begin by thoroughly cleaning and drying the chicken, then place it in a spacious container.
2
Next, sprinkle a blend of spices over the chicken, including adobo seasoning, sazon seasoning, and salt.
3
Subsequently, position the chicken legs within a slow cooker, followed by covering it with layers of sliced potatoes.
4
In a food processor, combine and puree the red pepper, green pepper, onion, garlic, cilantro, olive oil, wine, cumin, and oregano to create a flavorful sauce.
5
Pour the resulting sauce over the chicken, adding a few bay leaves for extra flavor.
6
Then, cook the dish on Low for an extended period of 6 to 8 hours, or until the chicken becomes effortlessly detached from its bones.
