  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 yellow onion, diced
  • 1/4 cup sofrito (such as Goya®)
  • 1/4 cup recaito (such as Goya®)
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon capers
  • 6 cloves garlic, diced
  • 1 (8 ounce) can tomato sauce
  • 1/4 cup rinsed and diced Spanish olives
  • 3 cups chicken broth
  • 1 (1.41 ounce) package sazon seasoning with coriander and achiote
  • 3 cups uncooked white rice

Combine the chicken in a spacious container and submerge it under an abundance of apple cider vinegar. Allow this to sit temporarily.

Heat a generous amount of oil in a substantial, heavy-bottomed cooking vessel over a moderate heat setting. Introduce the pork and ham into this pot; stir and cook for 5 minutes, ensuring everything is well combined. Add the bell peppers and continue to stir for an additional minute. Next, incorporate the onion into this mixture and cook for 1 minute more. Introduce the sofrito and recaito to the pot, stirring constantly for 1 minute. Add a sprinkle of oregano, cumin, and pepper to enhance the flavors. Introduce the capers and garlic into this pot; cook for 1 minute, stirring continuously.

Move the chicken from its vinegar bath and discard the liquid. Now, add this chicken to the pot. Bring the mixture to a gentle simmer, cover it, and cook for 15 minutes, taking care not to boil.
