Puerto Rican Beans and Rice
Ingredients

  • 1 pound pork roast, diced
  • 3 teaspoons minced garlic
  • 1 (15 ounce) can black beans, drained
  • 1 cup recaito (such as Goya®)
  • 1 (5 ounce) jar pitted green olives
  • 1 (1.41 ounce) package sazon seasoning with achiote
  • 3 cups long grain rice, rinsed
  • 2 3/4 cups water, or as needed

Preheat a large stockpot over medium-high heat and give it a generous coating of cooking spray. Next, add the pork to the pot and cook until it's nicely browned on all sides, approximately 7 minutes. Introduce the minced garlic into the pot and cook until it releases its aroma, roughly 1 minute.

Now, add the beans, recaito, olives, and a pinch of sazón seasoning to the pot. After that, decrease the heat and let the mixture simmer gently for around 10 minutes.

Subsequently, add a generous serving of rice to the pot and stir it thoroughly so that the rice is evenly coated with the flavorful liquid.

Following this, pour in a substantial amount of water into the pot and bring it to a rolling boil. Cover the pot with a lid and let it simmer for about 20 minutes.

After that, carefully lift the lid off the pot and gently stir the rice at the top. Be cautious not to disturb the slight crust that has formed on the bottom of the pot.

If the rice has absorbed most of the liquid, remove it from the heat immediately. However, if not, continue to cook for an additional 10 minutes or until the rice is cooked to your liking.
