Ingredients
- 4 skinless, boneless chicken breast halves, pounded to an even thickness
- 4 slices prosciutto
- 4 fresh sage leaves
- 1 tablespoon butter
- 3 fluid ounces dry white wine, or more as needed
- 1 pinch salt
- freshly ground black pepper to taste
Instructions
1
Lay out the chicken breasts on a flat surface, then position them on a sheet of parchment paper. Place a single slice of prosciutto and a fresh sage leaf on top of each breast, making sure they're centered. Using your thumbs, gently start rolling the chicken from one short end towards the other, securing it with wooden skewers as you go.
2
Heat a skillet over medium-high heat and melt the butter inside. Once hot, carefully place the rolled chicken breasts in the skillet and cook for 2 to 3 minutes on each side, or until they're nicely browned. Next, add a splash of wine to the skillet, along with some salt and pepper. Continue cooking until the chicken is cooked through, which should take around 8 to 10 minutes. To check if it's done, insert an instant-read thermometer into the thickest part of the breast - it should read at least 165 degrees F (74 degrees C). Remove the chicken from heat and let it rest for 5 minutes before serving.
