- 10 fresh mushrooms, sliced
- 3/4 cup dry white wine
- 3/4 cup chicken stock
- 3 tablespoons chopped fresh parsley
- 1 teaspoon freshly ground white pepper
- 6 slices thinly sliced prosciutto
- 6 slices fontina cheese

Dust chicken breasts lightly with flour, ensuring an even coating, and gently shake off any excess.

In a large skillet over low heat, melt the butter or margarine until it reaches a smooth consistency. Then, carefully place the chicken breasts into the skillet and cook for approximately 2 minutes on each side, or until they achieve a light brown color.

Increase the heat to medium-low and add sliced mushrooms to the skillet. Continue cooking until they release their juices, which should take around 4 minutes.

Next, add a splash of wine to the skillet and let it simmer until about 1/4 of the liquid has evaporated, which should take around 3 to 4 minutes. Then, boost the heat to medium-high and pour in some chicken stock, adding a sprinkle of parsley and pepper for added flavor. Simmer the mixture until it has reduced to approximately 1 cup, which should take around 10 minutes.

Gradually decrease the heat to low and place a slice of prosciutto on top of each chicken breast, followed by a slice of fontina cheese. Then, carefully return the chicken breasts to the skillet and cook just until the cheese has melted. Transfer each breast to an individual plate and top it with some of the rich mushroom sauce before serving.
