Ingredients
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1 pinch salt
- 5 tablespoons butter, cut into pieces
- 2/3 cup milk
- 1 cup white sugar
- 2 eggs
- 1 egg yolk
- 1 teaspoon vanilla extract
Instructions
1
Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. Prepare a standard muffin tin by lining it with 12 paper cupcake liners. In a separate bowl, mix together flour, baking soda, and salt; set it aside for now.
2
In a small saucepan, gently heat the butter and milk over low heat until the butter has fully dissolved. Using an electric mixer, combine sugar, eggs, egg yolk, and vanilla in a large bowl. Beat the mixture until it has thickened slightly and lightened in color, almost like whipped cream.
3
Gradually incorporate the flour mixture into the wet ingredients on low speed until just combined, being careful not to overmix. Slowly pour in the hot milk while continuously beating until just combined.
4
Divide the batter evenly among the cupcake liners. Place them in the oven and bake until a toothpick inserted into the center comes out clean, approximately 20 minutes.
5
After baking, allow the cupcakes to cool in the pan for 10 minutes. Then, transfer them to a cooling rack and let them cool completely.
