Pressure Cooker Shredded Pork Tacos
Ingredients
  • 3 tablespoons canola oil
  • 3 pounds boneless pork shoulder, cut into 1 1/2-inch cubes
  • 2 fresh poblano peppers, roughly chopped, or more to taste
  • 3 jalapeno peppers, roughly chopped, or more to taste
  • 1 serrano pepper, roughly chopped, or more to taste
  • 1 large onion, roughly chopped
  • 4 cloves garlic, roughly chopped
  • 2 teaspoons ground coriander
  • 3 teaspoons ground cumin
  • 1 1/2 cups beef broth
Instructions
1
Heat a substantial amount of oil in the pressure cooker over a high flame, causing it to shimmer and bubble vigorously.
2
Next, carefully add the pork cubes to the hot oil, allowing them to sear and brown evenly on all sides. Subsequently, introduce the chopped poblano, jalapeno, and serrano peppers, along with the sliced onion and minced garlic, into the sizzling oil mixture. Add the ground coriander, cumin powder, and beef broth to the pot, stirring everything together. Securely fasten the lid onto the pressure cooker and bring it to a rolling boil, then lower the heat to maintain a steady, gentle pressure.
3
Proceed with cooking under medium-high pressure for 1 hour.
4
Once the allotted time has elapsed, carefully remove the cooker from the heat source and pour it into a sink.
5
Subsequently, run cold water over the lid of the pressure cooker to allow the pressure to slowly dissipate.
6
Finally, carefully lift the lid off the cooker and present the dish for serving.
