  • 2 cloves garlic, minced
  • 2 (14.5 ounce) cans diced tomatoes, undrained
  • 2 (14.5 ounce) cans dark red kidney beans, drained and rinsed
  • 2 cups water
  • 3 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon dark brown sugar
  • 2 teaspoons unsweetened cocoa powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon kosher salt, or to taste
  • 1/4 teaspoon crushed red pepper flakes, or to taste

Begin by introducing ground beef into the pressure cooker, placing it over medium-high heat. Allow the meat to transform and become crumbly, taking approximately 8-10 minutes to achieve this. Next, carefully remove the cooked ground beef from the cooker and discard any excess fat that may have accumulated.

Now, heat a generous amount of olive oil within the pressure cooker over medium heat. Introduce the onion, green pepper, and jalapeño into the pot, stirring them gently until they have softened and become translucent. This process should take around 3-4 minutes, after which you can add the minced garlic and stir it into the mixture for a further 30 seconds.

With your ingredients now prepared, combine them in the pressure cooker: add the browned ground beef, diced tomatoes, kidney beans, water, tomato paste, chili powder, brown sugar, cocoa powder, cumin, salt, and red pepper flakes. Close the lid of the cooker and bring it to a boil, then reduce the heat to maintain pressure and cook for 8 minutes.

Once you've completed your cooking time, remove the cooker from the heat source and allow the pressure to naturally subside over a period of 5-10 minutes.
