Sprinkle shredded Cheddar cheese over the mashed potato mixture, then cover with the remaining tortillas.

Melt a small amount of butter on each side of the quesadilla before placing it in a large skillet over medium heat.

Cook each quesadilla for 2 to 3 minutes on the first side, until it's golden brown and crispy. Flip it over and cook for another 2 to 3 minutes, until the other side is also golden brown.
