Ingredients
- 4 tablespoons olive oil, divided
- 1 medium onion, minced
- 1 clove garlic, minced
- 6 medium potatoes, peeled and thinly sliced
- 2 quarts cold water
- 6 ounces linguiça sausage, thinly sliced
- 2 1/2 teaspoons kosher salt
- ground black pepper to taste
- 1 pound kale, rinsed and julienned

Heat three tablespoons of oil in a substantial cooking vessel over medium heat. Introduce the onion and garlic into this mixture, allowing them to soften for three minutes before adding the potatoes. Continue stirring as you cook these vegetables for another three minutes, ensuring they are well combined.

Now, introduce a substantial amount of water into the saucepan and bring this mixture to a boil. Gradually decrease the heat and allow it to simmer gently until the potatoes have become extremely tender, approximately twenty minutes.

During this time, prepare another cooking vessel by heating sausage over medium-low heat until it has released most of its natural oils, approximately ten minutes. Remove the cooked sausage from this vessel and set it aside.

Using a handheld blender, puree the potato mixture to create a smooth consistency. Introduce this cooked sausage into the saucepan, followed by a seasoning of salt and pepper to enhance its flavor. Gradually increase the heat to medium, cover this saucepan, and allow it to simmer for five minutes.

Next, add the kale into the saucepan and continue to cook until it has reached a tender state and turned a vibrant green color, about five minutes. Finally, introduce the remaining one tablespoon of olive oil into this mixture before serving it immediately.
