Pork Wonton Soup

  • 1 bunch green onions, cut into 1/2-inch pieces, divided
  • 6 fresh mushrooms, sliced
  • 1 pound ground pork
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 egg
  • 1/4 cup dry bread crumbs
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 (16 ounce) package wonton wrappers
  • 8 cups chicken broth
  • 16 uncooked medium shrimp, peeled and deveined
  • 1 medium head bok choy, torn into 2-inch pieces
  • 16 snow peas
  • 1 dash soy sauce, or to taste
  • 1 dash sesame oil, to taste

Begin by preparing the ingredients for your dish. Chop the green onions into small pieces and set aside, reserving 1 tablespoon of them for later use. Next, slice the mushrooms into thin pieces and set aside, keeping 1 tablespoon of them for later mixing.

In a separate bowl, combine the chopped green onions and mushrooms with 1 tablespoon of finely chopped mixture. Add to this bowl the ground pork, 1 tablespoon sesame oil, 1 tablespoon soy sauce, beaten egg, bread crumbs, salt, and pepper. Mix everything together thoroughly to create a well combined pork filling.

Now it's time to assemble the wontons. Take each wonton wrapper and place a small spoonful of the pork filling onto its center. Use your finger or a pastry brush to lightly moisten the edges of the wrapper with water, making sure they are not too wet.

Fold one corner of the wrapper over the filling onto the opposite corner to form a triangle, pressing the edges together to seal. Take the two long ends of the triangle and moisten them with water, then fold them together to seal the wonton firmly.

In a large saucepan, bring the chicken broth to a boil over medium heat. Once boiling, gently drop the wontons one by one into the broth and let them cook for 3 to 5 minutes, or until they float to the surface. Reduce heat to a simmer and let cook for 2 more minutes, or until the shrimp turn pink.

Add the gently stirred in shrimp, bok choy, and reserved sliced mushrooms to the saucepan. Let the soup simmer for 2 more minutes before adding the snow pea pods. Finally, garnish with the remaining green onions and a dash of soy sauce and sesame oil to serve immediately.
