Pork Stir-Fry Chow Mein
Ingredients
  • 2 tablespoons oil
  • 2 cups 1-inch pieces pork
  • 1 1/2 cups chopped onion
  • 1/4 pound mushrooms, sliced
  • 2 cups chicken broth
  • 2 cups sliced celery
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups fresh bean sprouts
  • 1/2 cup sliced almonds
  • 3 tablespoons reduced-sodium soy sauce
  • 2 tablespoons cornstarch
Instructions
1
Preheat a large skillet over medium heat, allowing the oil to warm up.
2
Now, add the pork and cook it in the hot oil until it reaches a light brown color, taking around 5 to 7 minutes.
3
Next, add the onion and mushrooms to the skillet and stir them until they become slightly tender, which should take about 2 to 3 minutes.
4
After that, pour in the chicken broth, add some celery for extra flavor, and sprinkle a pinch of salt and black pepper to taste.
5
Bring the mixture to a rolling boil, then cover the skillet with a lid and lower the heat to medium-low.
6
Let it simmer for 15 to 20 minutes, or until the pork is tender and falls apart easily.
7
Finally, stir in some bean sprouts and almonds into the pork mixture to add texture and crunch.
8
In a separate bowl, whisk together soy sauce and cornstarch until they form a smooth paste.
9
Then, stir this mixture into the pork mixture and continue cooking for another 2 to 3 minutes, or until it thickens and becomes saucy.
