- 6 cups water
- 2 pounds Chinese winter melon (dong gua), cut into 1 inch cubes
- 3 slices fresh ginger
- 1 tablespoon salt
- 1 tablespoon white sugar

Coat the pork with a mixture of cornstarch, cilantro, soy sauce, sugar, garlic, and ginger to create a uniform coating.

Combine water, winter melon, ginger, salt, and sugar in a large saucepan and bring to a rolling boil over high heat before gradually reducing the heat to a medium setting, allowing it to simmer for 5 minutes. In the meantime, shape small portions of the pork mixture into balls, approximately 1 teaspoon in size.

Gently place these meatballs into the simmering broth and continue to cook for an additional 8-10 minutes, or until they are fully cooked.
