Pork in Stroganoff Sauce
Ingredients
  • 2 tablespoons vegetable oil
  • 4 (1 1/4 inch) thick pork chops
  • 1 onion, thinly sliced
  • 1/4 pound fresh mushrooms, sliced
  • 1/4 cup water
  • 2 teaspoons prepared mustard
  • 1/2 teaspoon salt
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh parsley, for garnish

Preheat a large skillet over medium-high heat, allowing the oil to warm up. Sear the chops in the hot oil until they are nicely browned from both sides, then transfer them to a plate and set them aside temporarily.

Add the sliced onion and mushrooms to the remaining oil in the skillet, stirring occasionally as they cook until they reach a tender state. Combine the water, mustard, and salt in the skillet, stirring to incorporate.

Return the chops to the skillet and bring the mixture to a rolling boil. Gradually decrease the heat to a low setting, cover the skillet with a lid, and let it simmer for 1 hour.

Transfer the chops to a warm serving platter. In the same skillet, whisk the sour cream into the sauce until it's smooth and creamy. Heat the mixture through, but avoid letting it boil over. Pour the sauce over the chops and garnish with chopped parsley before serving.
