- 3 pounds boneless pork loin, cubed
- 3 tablespoons peanut oil
- 3 stalks celery, chopped
- 2 tomatoes, chopped
- 7 green chile peppers, chopped
- 4 cloves crushed garlic
- 4 cups chicken broth
- 1 (10 ounce) jar prepared green chile salsa
- salt to taste

Heat a large skillet over medium-high heat and sear the pork in oil, breaking it up into batches of 2-3 pieces to achieve even browning.

Transfer the browned pork to a 3-4 quart covered casserole dish and combine it with chopped celery, diced tomatoes, sliced chilies, and minced garlic.

Pour about 1 cup of chicken broth or water into the skillet used to cook the pork, stirring it vigorously over high heat to release any caramelized residue from the bottom of the pan and bring the mixture to a rolling boil. Gradually add more water or broth as needed to just cover the ingredients, then cover the pot and let it simmer until the stew reaches your desired consistency and the meat is tender, approximately 1.5 hours.

Season with salt to taste before presenting the stew. If it's not hot enough, you can add a dash of spicy jalapeno salsa to give it an extra kick.
