- 4 pork loin chops, 1 inch thick

- 1 pinch garlic powder to taste
- 1/2 pint red grape tomatoes, halved
- 1/2 pint yellow grape tomatoes, halved
- 3 cloves garlic, diced
- 1 tablespoon dried basil
- 2 1/2 teaspoons balsamic vinegar
- 4 ounces feta cheese, crumbled

Preheat the skillet over medium heat and add 1 tablespoon of olive oil. Introduce the onion into the skillet and cook until it reaches a golden brown hue; remove the onion from the skillet and place it on a plate, setting it aside for now.

Next, heat 1/2 tablespoon of olive oil in the same skillet. Sprinkle both sides of the pork chops with a pinch of salt, a few grinds of pepper, and a dash of garlic powder; position the pork chops in the skillet and cook until they reach your preferred level of doneness. To ensure this, use an instant-read thermometer to check the internal temperature; it should read 145 degrees F (63 degrees C). Remove the pork chops from the skillet and place them on a warm plate, keeping them at a cozy temperature.

Now, heat any remaining olive oil in the skillet and add the cooked onion that you set aside earlier. Introduce diced tomatoes, minced garlic, and chopped basil into the skillet as well; stir everything together until the tomatoes are tender and have a soft, pulpy texture. Add a splash of balsamic vinegar to the skillet and season with salt and pepper to taste.

Finally, place a cooked pork chop on top of the onion and tomato mixture, followed by a sprinkle of crumbled feta cheese to complete your dish.
