Pork Chops with Raspberry Glaze

  • 1/2 teaspoon dried thyme, crushed
  • 1/2 teaspoon dried sage, crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 (4 ounce) boneless pork loin chops
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1/4 cup seedless raspberry jam
  • 2 tablespoons orange juice
  • 2 tablespoons white wine vinegar
  • 4 sprigs fresh thyme

Preheat your oven to 200 degrees Fahrenheit, or 95 degrees Celsius.

Take a small bowl and mix together thyme, sage, salt, and pepper until well combined. Gently rub the mixture evenly over both sides of the pork chops.

In a non-stick skillet, melt 2 tablespoons of butter and 1 tablespoon of olive oil over high heat. Cook the pork chops until they reach an internal temperature of 145 degrees Fahrenheit, or 63 degrees Celsius, flipping them every 4-5 minutes on each side.

Take the cooked pork chops out of the skillet and transfer them to an oven-safe plate. Place the plate in the preheated oven to keep the pork chops warm.

In the same skillet, combine 1/2 cup of raspberry jam, 1/4 cup of orange juice, and 2 tablespoons of vinegar. Bring the mixture to a boil over high heat.

Continue cooking the sauce for an additional 2-3 minutes, or until it reaches your desired consistency. As the sauce cools, it will thicken.

Spoon the warm sauce into a large pool shape on a serving plate. Place the cooked pork chops in the center of the sauce and garnish with fresh thyme sprigs.
