  • 1 tablespoon vegetable oil
  • 4 (6 ounce) pork chops, 1 1/2 to 2-inches thick
  • 1/2 teaspoon salt
  • 1/2 teaspoon sage
  • 2 medium tart apples, cored and sliced
  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 cup hot water
  • 1 tablespoon white vinegar
  • 1/2 cup raisins

Preheat your oven to a hot temperature, specifically 350 degrees Fahrenheit or 175 degrees Celsius. Next, sprinkle some salt and dried sage leaves over the pork chops to add flavor.

Heat a generous amount of oil in a large, deep frying pan over a medium-high heat setting. Sear the pork chops on each side until they develop a nice brown color, approximately 3 minutes per side. Move the chops to a baking dish and reserve any remaining oil in the pan.

Take some of that reserved oil and stir it with a bit of flour until you get a smooth mixture. Whisk in some water and apple cider vinegar, then bring the liquid to a boil over medium-high heat while constantly stirring. Continue cooking until it thickens, then add some dried raisins and pour the mixture over the pork chops.

Cover the baking dish with aluminum foil or a lid to help retain moisture. Place it in your preheated oven and bake for 1 hour, but remove the foil during the last 20 minutes of cooking to allow everything to brown nicely.
