- 1 teaspoon dried minced garlic
- 1 teaspoon dried thyme leaves
- 1 teaspoon salt
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground paprika
- 4 (5 ounce) boneless pork chops, about 1 inch thick
- 2 tablespoons olive oil
- 1 medium sweet onion, thinly sliced
- 2 medium Red Delicious apples, cored and thinly sliced
- 1/2 cup apple juice
- 1 1/2 tablespoons brown sugar

Combine the dry ingredients of flour, sage, garlic, thyme, salt, allspice, and paprika in a small bowl. Set aside two-thirds of the spice blend; sprinkle the remaining one-third evenly onto both sides of the pork chops to coat them thoroughly.

Heat a generous amount of olive oil in a large skillet over medium-high heat. Add the pork chops and cook until they develop a rich brown color, flipping them every 3 to 5 minutes. Transfer the chops to a plate.

Add sliced onions to the skillet and cook until they become tender, taking about 3 minutes. Then, add sliced apples to the skillet and cook for an additional 2 minutes, stirring occasionally.

Stir in apple juice, brown sugar, and the reserved spice blend. Bring the mixture to a rolling boil.

Lower the heat to a low setting and cover the skillet with a lid. Simmer the mixture until the pork chops are no longer pink in their centers and reach your desired level of doneness, approximately 5 minutes. To ensure the chops are cooked to a safe temperature, insert an instant-read thermometer into their centers; it should read 145 degrees F (63 degrees C).
