Ingredients
- 1/2 cup whole milk
- 1 tablespoon all-purpose flour
- 1 tablespoon white sugar
- 2 (0.6 ounce) cakes cake yeast
- 1 1/3 cups margarine
- 1/2 cup dry bread crumbs
- 4 eggs
- 1 1/8 cups white sugar
- 8 cups all-purpose flour
- 4 teaspoons vanilla sugar
- 1 cup whole milk, or as needed
- 6 cups fresh plums, pitted and quartered
- 1 1/2 cups all-purpose flour
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 teaspoon ground cinnamon
Instructions
1
Begin by heating a small amount of milk in a saucepan over extremely low heat, bringing it to a temperature of approximately 100 degrees F (38 degrees C). Stir in 1 tablespoon of flour and 1 tablespoon of sugar, ensuring they are fully incorporated. Remove the saucepan from the heat source and transfer the mixture to a bowl, taking care not to splash any of the hot milk.
2
Crush the cake yeast into the bowl with the milk mixture, gently stirring until the ingredients come together in a smooth, creamy consistency. Cover the bowl with a cloth and place it in a warm location where it can sit undisturbed for 20 to 30 minutes, allowing the yeast to develop a spongy texture.
3
In another saucepan, melt 1/2 cup of margarine over low heat, then remove it from the heat source and allow it to cool to a lukewarm temperature.
4
Preheat your oven to 350 degrees F (175 degrees C), the ideal temperature for baking. Grease a 9x13-inch baking dish with butter or cooking spray, then sprinkle the inside of the dish with bread crumbs for added texture.
5
In a blender or food processor, combine 1 egg and 1 1/8 cup of sugar. Blend the mixture until it reaches a yellow, fluffy consistency.
6
In a large mixing bowl, whisk together 8 cups of flour with vanilla sugar. Add the egg mixture and activated yeast mixture to the bowl, stirring until they are fully incorporated.
7
Add 1/2 cup of milk to the dough mixture, stirring until it reaches a smooth, even consistency. Knead the dough for at least 15 minutes, incorporating as much air as possible into the mixture during this time.
8
Press the dough evenly into the prepared baking sheet, spreading it out to cover the entire surface. Arrange 4-5 plums over the top of the dough, leaving a small border around the edges.
9
In a separate bowl, combine 1 1/2 cups of flour, 1/2 cup of butter, and 1/2 cup of sugar. Use a pastry cutter or your fingers to work the ingredients together until they resemble fine crumbs.
10
Sprinkle the streusel mixture evenly over the plums, making sure to cover the entire surface. If desired, dust the streusel mixture with cinnamon for added flavor.
11
Bake the cake in the preheated oven for 1 hour to 1 hour and 10 minutes, or until a toothpick inserted into the center of the cake comes out clean.
