Polish Kotlety
Ingredients
  • 1 1/3 pounds lean ground beef
  • 2/3 cup milk cracker crumbs
  • 1 small sweet yellow onion, minced
  • 1 egg, well beaten
  • 1 tablespoon milk
  • 1 clove garlic, minced
  • 1 1/4 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup vegetable shortening for frying

Combine ground beef, crushed crackers, finely chopped onion, beaten egg, milk, minced garlic, kosher salt, and black pepper in a substantial bowl until the ingredients are uniformly incorporated. Form the meat mixture into twelve 3-inch patties, approximately 1 1/4 inches thick.

Melt vegetable shortening in a large skillet over medium-high heat. Sear the patties until they have a golden appearance, approximately 2 minutes per side. Lower the heat to low and continue cooking, uncovered, until the patties are no longer pink in their center, approximately 20 minutes further.

Remove the patties from the skillet and allow them to drain on paper towels until they are ready to be served.
