Plum Custard Cake
Ingredients
  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 1 teaspoon baking powder
  • 1/2 cup butter
  • 2 tablespoons heavy cream
  • 1 egg
  • 2 1/2 cups pitted and sliced plums
  • 1/2 cup heavy cream
  • 1/2 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius). To begin preparing the dessert, combine flour, a small amount of sugar and baking powder in a large mixing container. Use your fingers or a pastry blender to break down the butter into small pieces, resulting in a mixture resembling coarse crumbs. Next, gently fold in 2 tablespoons of heavy whipping cream and 1 egg into the mixture. Press the resulting dough firmly into the bottom of an ungreased 9-inch square baking dish, creating a flat surface. Arrange sliced plums over the top of the dough.

Once the oven is preheated, bake the dessert in the oven for 25 to 30 minutes. During this time, prepare a separate mixture by combining 1/2 cup of heavy whipping cream, 1/2 cup of sugar and 1 teaspoon of vanilla extract in a separate bowl. Using an electric mixer, beat the mixture well until it is smooth and creamy. Pour this mixture over the plums in the baking dish, taking care not to disturb the already-baked crust. Continue baking for an additional 20 to 30 minutes, or until the custard is set and firm to the touch. Serve the warm dessert, or allow it to cool before serving.
