Ingredients
- 1/4 cup crushed pistachios
- 2 tablespoons panko bread crumbs
- 1 tablespoon grated Parmesan cheese
- 1 tablespoon butter, melted
- 4 (6 ounce) fillets salmon with skin, center cut
- salt and ground black pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 4 lemon wedges
Instructions
1
Preheat your oven to the desired temperature of 375 degrees Fahrenheit or 190 degrees Celsius.
2
Take a small bowl and mix together pistachios, bread crumbs, Parmesan cheese, and butter until they are well combined.
3
Next, season the salmon fillets lightly with salt and pepper on both sides to enhance their flavor.
4
Heat some olive oil in a large oven-safe skillet over medium heat, and then sear the salmon fillets, flesh-side down, for 2 to 3 minutes.
5
Turn off the heat and carefully flip the salmon pieces over so that their skin side is facing downwards.
6
Using a brush, apply an even layer of Dijon mustard to the tops of the salmon fillets.
7
Top each salmon piece with a layer of the pistachio mixture, pressing it firmly onto the fish to ensure it adheres.
8
Place the salmon in the preheated oven and bake until it flakes easily with a fork, which should take around 10 to 12 minutes.
9
Serve the salmon hot, accompanied by lemon wedges on the side.
