Ingredients
- 2 cups white sugar
- 1 cup vegetable oil
- 3 eggs
- 2 teaspoons vanilla extract
- 2 cups grated zucchini
- 1 cup crushed pineapple
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon salt
- 3/4 teaspoon ground nutmeg
- 1/4 teaspoon baking powder
- 1 cup raisins
- 1 cup chopped walnuts
Instructions
1
Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius.
2
To ensure the pans are ready for baking, lightly coat them with a non-stick cooking spray.
3
Mix together sugar, oil, eggs, and vanilla extract in a large mixing bowl until you achieve a smooth consistency. Combine the ingredients thoroughly.
4
Next, add zucchini and pineapple to the mixture and stir until well incorporated.
5
Meanwhile, combine flour, baking soda, cinnamon, salt, nutmeg, and baking powder in a separate bowl. Gradually add the dry ingredients to the wet mixture until everything is fully incorporated.
6
Fold in raisins and walnuts at this stage to give the batter a nice texture.
7
Transfer the prepared batter into the greased loaf pans.
8
Bake the loaves in the preheated oven until a toothpick inserted into the center of each loaf comes out clean, approximately 1 hour.
9
Allow the loaves to cool in their pans for 10 minutes before transferring them onto a wire rack to complete the cooling process.
