Pineapple Tilapia Tacos

  • 4 (4 ounce) tilapia fillets
  • 3/4 cup frozen white corn
  • 3/4 cup canned black beans
  • 1/8 teaspoon fajita seasoning
  • 2 pineapple rings, cut into chunks
  • 1/2 small red onion, chopped
  • 1 tablespoon olive oil, divided
  • 12 (6 inch) corn tortillas
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced
  • 1/8 head cabbage, chopped
  • 1/4 cup sour cream
  • 1/2 lime, cut into wedges

Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. Next, take a baking sheet and give it a light coating of cooking spray to prevent sticking.

Now, sprinkle 1/4 teaspoon of fajita seasoning over the tilapia fillets and arrange them neatly on the prepared baking sheet. This will help bring out the flavors of the fish.

Place the tilapia fillets in the preheated oven and bake until they break apart easily with a fork, taking around 15 to 20 minutes. Once done, remove the fish from the oven and cut each fillet into three pieces.

In a separate pan, spray it with cooking spray to prevent food from sticking. Add corn, black beans, and 1/8 teaspoon of fajita seasoning to the pan. Cook over medium-high heat, stirring constantly until everything is heated through and combined, about 3 minutes. Remove the pan from heat.

In another pan, spray it with cooking spray to prevent sticking again. Add pineapple and cook over medium-high heat until it's lightly browned, about 2 minutes. Add an onion to the pineapple and cook until heated through, taking about 1 minute more. Remove the pan from heat.

Take a large skillet and pour in 1 teaspoon of olive oil over high heat. Add 4 tortillas to the skillet and cook until they're heated through, about 30 seconds per side. Remove the tortillas from the skillet and repeat the process with the remaining tortillas in the remaining oil.

Finally, place a piece of tilapia on each tortilla and top it with the corn mixture, pineapple mixture, cilantro, avocado, cabbage, sour cream, and a squeeze of lime.
